Welcome to the A Posto Personal Chef Services LLC Blog, part of our company website.  We named it La Cucina Stagionale (The Seasonal Kitchen) because we are strong believers in eating foods in season.  They taste better, are less expensive, and are better for you!

What Does A Posto Mean?

‘A Posto’ is an Italian expression that means ‘everything is in place’.  The name was chosen for the business because it symbolizes what we want our clients to experience with our service: to come home from a busy day and enjoy a delicious healthy meal made with fresh, seasonal ingredients without the worry of meal planning, shopping, cooking, or cleaning up afterwards—a posto!

About Pati D’Eliseo, Personal Chef

Chef Patricia (Pati) D’Eliseo is the Executive Chef of A Posto Personal Chef Services LLC, a Newport Oregon Company serving the Oregon Coast Communities of Tillamook, Lincoln, and Lane Counties.  Pati is directly responsible for delivering top-notch personal chef services to her clients as well as overseeing the business operations of the company.  Pati not only loves to cook for her clients, she also enjoys sharing her knowledge and love for food by being a cooking instructor.

Pati has been a passionate home cook for over 30 years; she makes dinner (along with her husband, Bruce Birt) using fresh, whole foods almost every night of the week.  Her interests are varied, but her favorite style of cooking is Mediterranean.  She shops the Lincoln County farmers’ markets for as long as they run; buys as much food from local producers as she can, and supports the local, organic, sustainable, and Slow Food movements. She believes that knowing where whole foods come from, cooking with fresh, seasonal ingredients, and eating together at the table are all part of healthy living.

Pati worked for Corporate America, in the technology industry, as a certified Project Management Professional (PMP) for over 20 years. It was a challenging, interesting, and successful career.  She managed complex multi-million dollar projects with large teams of people, implemented sophisticated and technologically advanced solutions, and worked very long hours; however, it was not her passion.

She took the steps to change her career by completing a professional culinary program with the Italian Culinary Academy (the Italian culinary program offered through the French Culinary Institute) in New York City.  Pati now has the opportunity to do what she truly loves for a living.  She chose the ICA because of its unique approach; she wanted more than what other vocational schools had to offer, and wanted to connect deeper with her Italian heritage.  She spent 5 months cooking in Italy learning the secrets of Italian cuisine and enjoys sharing them with her clients.

About Bruce Birt, Personal Chef

Bruce Birt is the Sous Chef of the company and shares the same passion for food and wine as his wife, Pati D’Eliseo.  Bruce is gifted in the art of salad making; his creations bring new life to an often overlooked dish.  His ability to combine the flavors and contrasts of the bounty of different greens, herbs, fruits, vegetables, cheeses, nuts, and dressings is truly remarkable, and these healthy creations can either be a compliment to a meal or served alone as a main entree.  In addition, Bruce has devoted his recent culinary efforts to mastering the art of fine pizza making as found in Naples, Italy, the birthplace of pizza.  His pizza-making techniques include using handmade dough recipes incorporating select pizza flour, salt, and spring water from Italy, preparing pizza sauces featuring fresh herbs and the famous San Marzano tomatoes of the Sarnese-Nocerino region, and baking pizzas with artisanal cheeses and salumi’s produced throughout the country’s 20 regions.  These techniques and ingredients have led to a pizza ‘experience’ rarely found on the West Coast.

Bruce started his culinary career in Junior high school with ‘Boys Chef’ class.  He quickly figured out that he could eat more if he could learn to cook for himself.  When he met Pati in San Francisco in the early 90’s he realized that he had found a kitchen ‘soul mate’. Over the years, Bruce and Pati have had the opportunity to travel to new places to learn about different types of foods, how they are prepared, as well as how they are celebrated.

Chef Bruce spent 15 years working for Corporate America as a sales executive, and the last 12 years as a realtor on the Oregon Coast. He has now partnered with his wife Pati to run A Posto Personal Chef Services LLC.   Bruce offers his pizza making talents as part of the small dinner parties service the company offers, and his secrets to making a delicious salad as part of the cooking class service.
